Beef Tacos

Tacos are a quick and easy lunch or dinner that most kids adore.  So why not make them tonight?

Tacos
1 pound ground beef (or ground turkey, chicken, not-beef, whatever)
2T taco seasoning (recipe follows)
¼ cup water
crispy taco shells or soft small tortillas
shredded lettuce, chopped tomatoes and shredded cheese to top tacos

Brown the ground meat in a heavy skillet over high heat.  Drain the grease and then stir in the seasoning and water. Let simmer for five minutes and you’re done!

I like to put everything on the table in bowls and let everyone make their own tacos.  You basically scoop some meat into the taco shell and then sprinkle tomatoes, lettuce and cheese on top.  Add some taco sauce if you desire more flavor punch.

Taco Seasoning Mix

2T chili powder
2T cumin
1-1/2 T paprika
1T onion powder
1T garlic powder
1/8 to 1/4 teaspoon cayenne pepper (depending on your desire for heat)

Combine all ingredients, blending well, and store in an airtight container.  Use 2 Tablespoons of this mixture to flavor one pound of ground meat.

You can also serve this meat in taco omelets, taco salads, or just on its own in a bowl without the tortillas.  I double the batch since you may need extra.  It’s fun and fabulous.
